Recipe of the month: Sweet corn and quinoa

Sweet corn and quinoa is the perfect side dish (and it’s packed full of fiber)!

Prep time: 2 minutes

Cook: 10 minutes

Total time: 12 minutes

Servings: 4

Ingredients for the sweet corn and quinoa:

  • 1 cup (uncooked) quinoa
  • 1 cup sweet corn (fresh off the cob, canned, or frozen and defrosted)
  • 1/2 cup grated parmesan cheese
  • 1/3 cup 2% Greek yogurt
  • Salt and pepper as desired

Directions:

  1. Cook quinoa according to package instructions.
  2. Remove from heat and immediately add corn, parmesan cheese and Greek yogurt. Season with salt and pepper to taste. Serve immediately.

Note - if you prefer a thinner consistency, thin with a bit of milk.
