Recipe of the month: Sweet corn and quinoa

Sweet corn and quinoa is the perfect side dish (and it’s packed full of fiber)!

Cook: 10 minutes
Total time: 12 minutes
Servings: 4
Ingredients for the sweet corn and quinoa:
- 1 cup (uncooked) quinoa
- 1 cup sweet corn (fresh off the cob, canned, or frozen and defrosted)
- 1/2 cup grated parmesan cheese
- 1/3 cup 2% Greek yogurt
- Salt and pepper as desired
Directions:
- Cook quinoa according to package instructions.
- Remove from heat and immediately add corn, parmesan cheese and Greek yogurt. Season with salt and pepper to taste. Serve immediately.
Note - if you prefer a thinner consistency, thin with a bit of milk.
